Any good vegetarian versions of Caribbean dishes (using vegemeat is ok too)?

My parents are from St. Vincent but I don't know that much about Caribbean food. My mother decided our family would become vegetarian when I was little, so I grew up eating tofu and other health-food type things. I am familiar with a few things, like plantain, cassava, pulao, roti, pone, sorrel (drink) and tropical fruits. I am ok at cooking Indian food, and I know Indian cuisine has strongly influenced the food my parents grew up with (also African, French, Spanish, and South American influences can be found).





Anyway, I am going to visit my parents and I would like to cook a vegetarian Caribbean feast for them, including a drink, a dessert (or two) , one spicy main dish and one not-so-spicy main dish, and several sides. Particularly the kind of ingredients that they probably haven't eaten in years, that will remind them of childhood. I am willing to use vegemeat to substitute for meat, though I have never seen any vegegoat at the health store! Please share recipes/ideas.

Here's a pretty good recipe for Jerk tofu:





1 pound firm tofu


1 cup vegetable stock


Pinch salt


1 clove garlic, minced


1 teaspoon thyme


1 teaspoon freshly ground black pepper


Jerk Sauce (see recipe)





Slice the tofu into bite-size pieces.


Bring the vegetable stock to a boil, adding salt, garlic and thyme. Add the tofu and simmer for 5 to 8 minutes. Remove tofu and drain on paper towels.


Sprinkle black pepper onto the tofu, then carefully roll the pieces in jerk sauce and set aside for at least 1 hour.


Place the tofu in the oven at low heat for about 3 minutes. Serve with jerk sauce.


Yield: 4 serving

(Jerk Sauce Recipe)





12 habaneros, seeds and stems removed


3 onions, chopped


2 clove garlic finely chopped


1/2 cup vinegar


2 tablespoons ground allspice


1 tablespoon olive oil


1/4 cup soy sauce


1/4 cup minced scallions

Ingredients:


2 C dried beans (any kind)


2 medium Idaho potatoes


1 C diced yellow yams


2 medium sweet potatoes


12 medium okra


2 C fresh corn (cut kernels off cob)


3 medium carrots


3 stalks of scallions


3 cloves fresh garlic


1 small green Scotch bonnet (habanero) pepper


3 C natural coconut milk


1 T Soya margarine


7-12 pimento seeds (allspice)

3 pieces fresh thyme


2 C whole wheat flour


Fresh cilantro (garnish)





Directions:


Soak beans in distilled water overnight to remove the gas. Chop garlic and thyme and dice remaining vegetables. Put beans to boil with scallions, pimento seeds, thyme, garlic, and pepper. Add coconut milk to boil along with beans until fully cooked, then add vegetables to the pot. Knead flour with a little water to make small dumplings (spinners). Add spinners to pot and boil until cooked. When stew starts to thicken, add soya margarine and simmer to flavor. Garnish with cilantro. Serve with brown

If you don't find something specific, look at recipes made with meat and substitute tofu or other things for the meat portions. Just do a websearch for recipes, vegetarian caribbean recipes, etc. Hope you find what you need.
